My goodness, it’s been far too long since I’ve shared a recipe for you all to enjoy. I’m terribly sorry about that and can’t wait to start sharing more recipes as things have finally started to calm down. I’ve been a busy today woking on a very exiting photo shoot (more to come, I promise) and for the shoot I needed a cake, so I quickly whipped this delicious Caramelised Apple Cake up this morning and after a day of styling and photographing this was such a lovely treat to enjoy. This wonderful cake takes no time at all to make, is delicious while served warm and would be perfect for any spring picnics or dinner parties! I’m already thinking of making it again, but this time swapping the apples with pears and adding a handful, or two, of fresh blueberries. Recipe
Preheat oven to 175c, butter and flour a 10cm cake pan.
In a large mixing bowl, beat together the butter and both sugars together until light and fluffy. Add the 2 egg yolks and 2 full eggs to the mixture and beat unit well combined, then the lemon juice. Gradually add the flour and baking powder to the cake mix and mix until smooth and well combined. In another bowl, whisk the 2 egg yolks until stiff peaks form - using a metal spoon, gently fold the egg whites into the cake mixture until combined. Pour your cake mixture into your prepared cake tin and gently level with the back of a spoon or knife.
For the filling - cut your peeled apples in half and gently cut thin slices into your apple halves. Making sure not to go all the way through - you want the halves to stay as one piece. Add a teaspoon of vanilla essence to the cut tops of all apples, before sprinkling with sugar. Then gently push the apple halves into the top of your cake mixture - with the slices facing upwards.
Bake for around 35-40min to until a skewer inserted comes out clean.
Allow to cool for 10min in the cake tin before turning out to serve. Serve while still warm with a dollop of freshly whipped cream or yogurt, enjoy x
