My gosh what a crazy day its been, everything from looking after crazy cool kiddies, dealing with what walls/doors to rip out in our home, where to put light switches, dentist visits and general running around I am thrilled to be finally sitting down to write today’s blog post!
I made this cake on Monday afternoon as it was the coldest day this winter and all I really felt like doing was pottering and baking. So I made a chocolate cake with vanilla bean icing and oh my it was delicious, the cake had the perfect hint of chocolate and the icing was delicious as it wasn’t too sweet but just sweet enough with the vanilla! Its the perfect cake to make on a rainy or not so rainy day. I hope that everyone has had a really lovely day so far.

Chocolate Cake with Vanilla Bean Icing

By far the easiest and most versatile cake recipe ever! It will always come out perfectly fluffy and moist and the icing is not too sweet but oh so delicious!

Cake

1/4 cup milk
125g butter, softened
3/4 cup brown sugar
2 eggs
1 tablespoon plain flour
1 tablespoon vanilla essence
1 cup self raising flour
1/4 cup cocoa powder
Preheat oven to 180°C In a large bowl combine all the ingredients together for around 10 min or until batter starts to lighten. Pour cake batter into a well buttered and floured cake tin, and bake for around half an hour or until a skewer comes out clean. Allow to cool completely before icing!

Icing

4 tablespoons unsalted butter, softened
2 cups icing sugar
2 tablespoons milk
2 teaspoons vanilla extract with seeds
1 pinch salt
In a medium bowl, beat together the butter, sugar, milk, vanilla and salt until light and fluffy! Once your cake is cooled, generously ice and then serve with vanilla ice cream! x
