Vanilla & Cinnamon Cupcakes

As strange as it sounds, I’m not really a fan of the traditional Christmas fruit cake, dont get me wrong they are amazing but just not for me ~ I was always the one that would pull of the fondant icing and throw away the cake. My Mum threw an amazing pre-Christmas party on the weekend as asked me to bake some cupcakes, so I thought a rich vanilla cupcake with the warmth of cinnamon would be perfect, and acording to all the guests it was! If your not a fan of the richness of Christmas cakes, but want something just as special and delicious, this might be perfect for you. And whats great about this recipe is it can be made into a whole cake or cupcakes, the choice is yours really!

Vanilla & Cinnamon Cupcakes 

1 cup white sugar

2 eggs

6 tablespoons butter, softened

1 tablespoon vanilla essence

2 cups self-raising flour

1 cup milk

2 teaspoons cinnamon

Preheat oven to 170°C and line cupcake tins with pretty cupcake wrappers. In a large mixing bowl, beat together sugar, eggs, butter, cinnamon, vanilla, flour and milk for around 6 minutes until fluffy and smooth. Spoon the mixture into prepared cupcake liners and bake for around 10-15 min or until a skewer comes out clean.

Vanilla Buttercream Icing

2 tablespoons butter

1/2 cup icing sugar

splash of milk

2 teaspoons vanilla essence

Fine coconut

In a bowl, combine icing sugar, butter, milk, vanilla essence until smooth. Once cupcakes are completely cooled, ice cupcakes with a knife and sprinkle with coconut.

Notes

If you want to bake this into a cake: butter and flour a cake tin and bake for around 20-30 min or until a skewer comes out clean. You could also use a fancy cake tin for a little more festive cheer.
