There are times when you want to spend a lot of time creating a beautiful cake, and there are other times when you want to whip up something that takes less than an hour from start to finish. This simple yet perfect vanilla cake is one of those truly delicious cakes that takes no time at all and can be made for any occasion - it’s wonderful for afternoon tea served with a light dusting of icing sugar, cream and seasonal fruit. Or of course you can ‘dress’ it up a little more with icing - or even make two cakes and create a layer cake. This is what I love about baking, the options of how to serve a classic vanilla cake are truly endless, and this lovely recipe is such a perfect place to start. x
Recipe
Preheat the oven to 180ºC and butter and flour a 20cm cake pan.
Sift the flour, salt and baking powder together into a large mixing bowl. Stir in the sugar. Make a well in the centre of the dry ingredients and pour in the melted butter, eggs, milk and vanilla and using an electric beater mix until smooth and well combined.
Gently pour your cake batter into your prepared cake pan and bake for around 25-30 minutes or until a skewer inserted comes out clean. Allow to cool for around 10min in the tin before transferring to a wire rack to cool completely. Once cool, lightly dust with icing sugar and serve with dollop of cream and fresh seasonal fruit.
