There really is nothing more perfect than a slice of decadent fudgy chocolate cake - not only is this cake a pure crown pleaser, it’s also ridiculously simple to make and tastes like chocolate, nutella and coconut heaven. I whipped this up last weekend for a our very good friends housewarming party, I hope it was a hit as there wasn’t much left by the end of the evening. Recipe
Coconut and Nutella Chocolate Cake
Preheat your oven to 180°C and butter and flour a 24cm cake pan. Add the chocolate, butter, nutella, cocoa powder and vanilla to a medium sauce pan and gently heat over a low to medium heat until everything is melted and smooth. Set aside to cool slightly.
In a large mixing bowl, combine the desiccated coconut, plain flour, baking powder and sugar and whisk to combine. Add the milk to your dry ingredients and mix to combine, before gently adding the melted chocolate mixture, mix until combined and smooth. Scrap down the sides of the mixing bowl before adding one egg at a time and continue to mix until everything is combined. Pour into your prepared cake pan and bake for around 40min or until a skewer inserted comes out clean. Allow to cool for 10-20 minutes in the pan before transferring to a wire rack to cool completely before icing.
Nutella Buttercream
Using a electric mixer, wisk the nutella, butter, icing sugar, milk and vanilla in a mixing bowl until combined and smooth. Once your cake has cooled, place it atop a cake stand or plate before generously spreading your nutella buttercream on top of your cake, sprinkle with a desiccated coconut. Slice into generous portions and enjoy. xo
