IMG_0722With only one day left of the working year for 2013 I thought it would be the perfect time to mix up a few delicious summer cocktails to celebrate the end of a very busy year. One of my all time favourite cocktails is a delicious and wonderfully easy Frozen Mojito - there really is something so perfect about a splash or two of white rum, soda water, lemon and of course a lot of fresh mint. Plus, it’s the most perfect drink to whip up in my shiny new KitchenAid Artisan Blender - it even has a cocktail function which is incredibly cute! KitchenAid have also just released some gorgeous videos of what else you can whip up in one of their amazing blenders, from Capsicum and Almond DipPassionfruit Ripple Cheesecake and of course the most stunning frozen Cosmopolitan - all of which are beyond perfect for summer entertaining. Frozen Mojito

I don’t really follow ‘recipes’ as such when it comes to making drinks, it’s more just a little of this, a splash of that and you quickly work out how strong you like your cocktails. But this is what I used to make my delicious Frozen Mojito.
Serves 1-2 people, depending on the size of the glasses
1 1/2 cups of ice - another cup of ice for serving
1 lemon, sliced
2 cups soda water
Dash or two, 30ml, white rum
40ml lemon and lime cordial
1 handful, 1/4 cup, fresh mint leaves  - don’t place into the blender!
Place everything, apart from the mint leave, sliced lemons and half of the ice, into the blender - plus for a few seconds on the cocktail function until the ice is just crushed. Place the ice, sliced lemons and mint into two mason jars, pour your Frozen Mojito over the fresh ingredients and serve immediately.
