Chocolate Cupcakes with White Chocolate Icing
Over the weekend we were lucky enough to go to our good friend Greta’s Halloween themed birthday party, it was such a fun night as everyone dressed up and she did such an amazing job decorating her home and having the brilliant Heart Attack Alley play. But no matter how good a party, all birthday girls need cake, so I made these tiny chocolate cupcakes with white chocolate icing for her. Happy Birthday Greta. x

Chocolate Cupcakes with White Chocolate Icing
1/4 cup milk
125g butter
3/4 cup brown sugar
2 eggs
1 tablespoon plain flour
1 tablespoon vanilla essence
1 cup self-raising flour
2 tablespoons cocoa powder
Preheat oven to 180°C, combine all ingredients in a mixing bowl and beat for approximately 6 minutes. Spoon mixture into 1/2 of the cupcake mold. Bake for about 20-30 minutes or until a skewer comes out clean and allow to cool completely.
White Chocolate Icing
1/4 cup white chocolate ganache
1/2 cup icing sugar
2 tablespoons milk
red food colouring
yellow food colouring
In a bowl whisk chocolate ganache, icing sugar and milk together until smooth. I made the icing orange by carefully adding drops of red and yellow food colouring into the icing until a soft orange colour formed, you don’t have to make your icing orange if you don’t want to.
Once the cupcakes are cooled, generously ice cupcakes with white chocolate icing and decorate with what ever type of sprinkles you like. x
