Hello everyone I hope you had a wonderful weekend. I had a fantastic weekend meeting and catching up with some very lovely people, going to craft markets, baking, trying my first cake pop, catching up on sleep and taking Kora for lots of walks while Ben was running around Auckland as part of the 48 hour film festival. One of the things I baked over the weekend is this very simple and delicious lemon loaf, if you are a fan of lemon you will love this. It’s so lemony you could almost do without the sweet lemon drizzle, it would go perfectly with a warm cup of tea on a chilly winters afternoon. x

Lemon Loaf

155g self-raising flour
1 teaspoon baking powder
155g caster sugar
20g cornflour
155g butter, softened
3 eggs
1 lemon, zested and juiced
Preheat oven to 180°C, grease and flour a loaf tin. Sift the flour, baking powder, caster sugar and cornflour into the bowl of a food processor *. Pulse the mixture for about 4 seconds until combined. Add the butter, eggs, zest and juice of one lemon and process until evenly mixed - about 10 to 30 seconds.
Pour the mixture into the prepared loaf tin and bake for around 35-40 minutes, or until a skewer comes out clean. Let the loaf cool in its tin before icing.

Drizzle Icing

160g white sugar
2 lemons, juiced
To make the drizzle icing, juice the lemons and dissolve the sugar in the juice. Prick the whole surface of the loaf with a fork and pour the lemon mixture over the loaf, allow it to set before removing the loaf from the tin. Enjoy with a warm cup of tea!
*If you don’t have a food processor, you can still make this using a electric beater.
