Its rather nice when its just Mum and I home for dinner, we both love our pasta but our lovely men don’t as much. Mum has made this pasta dish for as long as I can remember and its always so deliciously bad for you! It’s certainly a dish that you only have on rather special occasions or cold rainy days like today. x

What you’ll need
1 packet Spinach Fettuccine
5 bacon rashers-sliced
1 onion thinly chopped
2 cloves garlic
500 ml Cream
1 small handful fresh parsley
Parmesan cheese
Salt/pepper
What to do
Cook fettuccine in boiling water, while pasta is cooking fry bacon, onion and garlic in a deep fry pan.  Once pasta is cooked, drain and add to fry pan with bacon and onion, mix to combine and then add the cream.  Allow to simmer until cream reduces, add salt and pepper to taste. Before serving top with chopped parsley and parmesan.
