Chocolate Ninja Turtle Cupcakes

As all of you may know by now, yesterday was Ben’s Birthday. When Ben got home from work I surprised him with Ninja Turtle Cupcakes he was obsessed with Raphael from the Teenage Mutant Ninja Turtles when he was little. So I thought I would try my hand at some turtle cupcakes, they were really easy to make and Ben loved them which is really all that matters!

Chocolate Ninja Turtle Cupcakes

1/4 cup milk

125g butter

3/4 cup brown sugar

2 eggs

1 tablespoon plain flour

4 cap fulls of vanilla essence

1 cup self-raising flour

2 heaped tablespoons cocoa

Preheat oven to 180°C and line muffin tin with high cupcake liners. In a small saucepan the melt butter and vanilla essence over a low heat. Combine all ingredients in a large mixing bowl and beat for approximately 6-10 minutes. Spoon mixture into 1/2 of the cupcake mold. Bake for about 10-15 minutes or until a skewer comes out clean. Allow to cool completely before icing.

Royal Icing

This icing is so simple and by far the best to decorate with!

2 egg whites

3 cups icing sugar

2 teaspoons vanilla essence

Green food colouring

Red food colouring

Black food colouring

Mix egg whites, vanilla essence and icing sugar together until white and glossy. Divide mixture into 4 bowels and slowly add food colouring in to make green, black and red icing, leave some white icing for the eyes.

How to decorate your Ninja Turtle Cupcakes

Once you’ve made your green, red, black and white icing. Spoon green icing over cupcake, I made it rather thick so it was even. With a clean piping bag and long nib pipe red icing in a line across cupcake, wash icing bag out. Fill piping bag with white icing and carefully make eyes. Wash icing bag and fill with black icing and put black dots in the middle of the white eyes and carefully draw a smile/grin. So easy!
