I have never really been a fan of breakfast, I have always been more of a lazy brunch kind of girl. That said though, I can’t go long after waking without eating something, and I always try to start my day with something healthy, organic and of course delicious. And with the terribly exciting launch of Anchor’s delicious new organic milk it’s so much easier now to add organic and healthy ingredients to your daily lifestyle - which is so fantastic as we’re all so busy! Below are two of my favourite meals to start the day with, especially on busy days, and of course always followed with a strong cup of coffee! I’d love to hear what your favourite breakfast meals are to start the day with. x

Organic Berry Smoothie
Place all of the ingredients to a blender, bend until smooth - add more milk if you need. Pour into your favourite glass and enjoy.
Muesli
Preheat the oven to 150C. Using a small food processor (or knife) roughly chop the almonds, cashews and walnuts. In a large mixing bowl, combine the nuts, rolled oats, shredded coconut, pumpkin seeds and dates and mix to combine. In a small sauce pan gently melt the coconut oil and honey together, pour over the dry ingredients and mix to combine. Pour mixture into a baking tray and bake for around 30min, stirring with a wooden spoon every now and then to stop from sticking, bake until golden and your home starts to smell amazing. Allow to cool before placing into a airtight jar, serve with either warm milk with a hint of cinnamon or cold milk. Enjoy. x
