I’m always so honoured that Mia would want me to share her beautiful recipes with all of you, recipes are such a personal thing and it’s always so lovely to pass them on! Plus with the weather slowly starting to cool down it’s the perfect time to get back into the kitchen and try some new seasonal recipes, the combination of passionfruit and lemon in a self saucing pudding couldn’t be more perfect for a Autumn dessert. Passion Coconut Delicious

Prep time: 20 mins
Cooking time: 30-35mins in the oven
Sponge mix
1 cup self raising flour, sifted
1/2 cup caster sugar
1/2 cup toasted shredded coconut
1/2 cup coconut milk
1/4 cup water
1 egg
80gm melted (and cooled) butter
Sauce mix
3 teaspoons cornflour
1/2 cup caster sugar
1/3 cup fresh lemon juice
1/2 cup milk
3 ripe passionfruit with pulp scooped out
Pre-heat your oven to 180 degree, and grease a baking dish that is 20cm x 25cm (a baking dish that holds 6 cups of water will also do, but if it is quite deep, you will have to increase the baking time) Combine sifted flour, sugar & toasted coconut in a large bowl.
In a separate jug, whisk together the coconut milk, water, egg and butter, then gently fold into the dry ingredients. Carefully spoon out the batter into your prepared baking dish and set aside. Mix together the cornflour and sugar then sprinkle this over the batter that’s in the baking dish.
Pour lemon juice and milk together into a small saucepan and place over heat, stirring constantly until the mixture just comes to the boil. Take the saucepan off the heat and stir in the passionfruit pulp. Pour the sauce over the back of a large metal spoon (so that the sauce doesn’t cut through the batter) onto your baking dish batter, and place in the oven for 30-35 mins. Serve warm with a sprinkling of icing sugar and perhaps some vanilla ice cream or creme fraiche!
