Happy Friday everyone - can anyone else believe that it is already June, where has the year gone! With winter now ‘officially’ here, I can’t think of a better time that to start potting in the kitchen and making a whole bunch of yummy things to nibble on during the colder months. I made the easiest Peanut Butter, Chocolate and Vanilla Muesli the other day and I been eating it with some generous servings of delicious Russian Fudge Yoghurt from The Collective - it’s amazing and would be so perfect for brunch or dessert over the long weekend. x

Peanut Butter, Chocolate & Vanilla Muesli

2 cup rolled oats
1/4 cup smooth or crunch peanut butter
1/2 cup golden syrup
1 teaspoon ground cinnamon
2 teaspoons cocoa powder
2 teaspoons vanilla
Preheat oven to 170°C and line a baking tray with baking paper. Place the peanut butter, golden syrup, cinnamon, cocoa powder and vanilla into a small saucepan and heat over a medium heat until melted and smooth.
Place the oats into a large bowl and once the peanut butter mixture is ready, pour over the rolled oats and mix until all the oats are coated. Pour oats into the prepared baking tray and bake for around 10-15 minutes or until golden brown - make sure you keep an eye on it as it can burn easily.
Serve this delicious muesli with a generous serving of your preferred yoghurt. x
