One of my all time favourite sweets when I was younger was coconut ice - not only is it incredibly pretty and reminds me of lazy afternoons baking with my Grandma, it’s also wonderfully simple to make and is always a crowd favourite. You may have noticed that there have been quite a few delicious Ice Cream posts on the blog lately, a few months ago I was approached by Tip Top Ice Cream to see if I would help promote their iconic ice cream over the summer months with a delicious new recipe each week. Of course I jumped at the chance and have had the absolute honour of creating a new recipe for you each week, I hope you’ve been enjoying them as much as I have as I really can’t think of anything more perfect than ice cream during summer. So this week I thought what could possibly be better than combining delicious strawberries and cream ice cream, either freeze dried or fresh strawberries with the most perfect coconut ice base - the end result is the most delicious, refreshing and pretty coconut ice slice you’ll ever try. Recipe
Line a rectangle baking tin with either baking paper or cling film. Bring your ice-cream out to soften slightly at room temperature. Sift the icing sugar into a large mixing bowl of an electric mixer and then stir in the coconut, pour in the condensed milk and vanilla essence. Gently mix on a low speed until combined before turning out onto a clean surface to knead until smooth. Press your coconut ice mixture into the prepared tin until nice and flat, place into the freezer until ready to add the ice cream.
Place the ice-cream into a bowl of a electric mixer, using a paddle attachment gently mix until smooth and the strawberry ripples have turned the ice cream a beautiful soft pink - before gently folding in most of the strawberries, leave aside enough to decorate the top of your slice. Pour your ice-cream over the top of the coconut ice and level with a offset spatular or knife. Gently drop the pan onto your bench to make sure everything has settled - sprinkle with the freeze dried or fresh strawberries and place into the freezer over night or until completely set.
