It’s not very often re-share my recipes, but I just can’t help but share my carrot cake recipe again – it’s wonderfully simple to make and really is so perfect. I made this delicious cake almost two years ago for Easter and thought it would be perfect to whip up again this Easter – especially with the horrible weather we’re having at the moment, I think it’s the perfect time to potter in the kitchen and fill your home with the beautiful warm spices from this delicious cake. And of course top with generous amounts of the silkiest cream cheese icing and you’ll have a dessert that everyone will adore this weekend.

I hope that everyone has a truly wonderful long weekend planned with your beautiful friends and family. After some very exciting news yesterday about my hubbies new job offer, we’re off to celebrate with some amazing friends of ours, go to a beautiful house warming and of course eat a silly amount of chocolate. Happy Monday everyone, I hope you all had a lovely weekend. We had the most wonderful weekend celebrating the end of Ben’s MBA with all our friends and family – it was the perfect way to end a very busy year, thank you so so much to everyone for your well wishes and of course those who celebrated with us, it really was a fantastic weekend!

You may have noticed lately that I’ve become a little obsessed with strawberries – in my mind they’re the king of summer berries, they’re just so delicious and of course can be made into everything from tarts, puddings and various ice cream treats. I’ve been wanting to whip up a batch of strawberry jam for a while now so last week on a rainy summers afternoon I made the most perfect batch of strawberry and vanilla jam. If you’ve never made jam before wonderfully easy, you can experiment with different flavours of fruit low in pectin that you like and of course an afternoon of jam making will leave your home smelling absolutely stunning, plus a few delicious jars of homemade strawberry jam would make such a lovely Christmas gift this year. x

One of my all time favourite sweets when I was younger was coconut ice – not only is it incredibly pretty and reminds me of lazy afternoons baking with my Grandma, it’s also wonderfully simple to make and is always a crowd favourite. You may have noticed that there have been quite a few delicious Ice Cream posts on the blog lately, a few months ago I was approached by Tip Top Ice Cream to see if I would help promote their iconic ice cream over the summer months with a delicious new recipe each week. Of course I jumped at the chance and have had the absolute honour of creating a new recipe for you each week, I hope you’ve been enjoying them as much as I have as I really can’t think of anything more perfect than ice cream during summer. So this week I thought what could possibly be better than combining delicious strawberries and cream ice cream, either freeze dried or fresh strawberries with the most perfect coconut ice base – the end result is the most delicious, refreshing and pretty coconut ice slice you’ll ever try. Hokey Pokey

While my computer was busy updating it’s self this morning I thought I’d make use of this rare downtime to go through my old recipe books to find something delicious to bake with golden syrup – I absolutely adore their limited edition tins and their new one designed by Greg Straight far too stunning for words, it really is the most perfect kiwi partnership! So I thought what would be more perfect than whipping up a batch of delicious Hokey Pokey. I’m almost certain this classic kiwi recipe is from Edmonds – I found it scribbled in the back of one of my old cookbooks, either way it’s the most perfect recipe for hokey pokey and would be incredible mixed in with vanilla ice cream!
