I adore the summer holidays, it’s the perfect time to relax, catch up with family and friends and of course take lots of afternoon naps after eating and drinking so much on Christmas Day! We had a lovely time away in Wellington, but it’s so so lovely to be back home and to potter around the house and garden while the weather is warm – hehe I’m kind of in love with our little veggie garden to be, I can’t wait to see how it grows over the summer months! I hope that everyone is having a wonderful break so far, I’d love to hear what you’ve been up to – but for now, enjoy this absolutely perfect summery Weekly Roundup from the wonderful Toodles Noodles. x

To all my readers in the southern hemisphere - Happy Summer everyone! As you may have read from my previous post – the weather here in Auckland has been a bit pants but as of tomorrow we’re supposed to experience sun for a whole week! I’m getting quite excited about the prospect of going to the beach, exploring waterfalls, going on walks – oh the possibilities!
Yesterday we went strawberry picking – my first time berry picking! I had such a blast even though it was a bit drizzly out and we left the fields with 4.2kg worth of delicious, ruby red strawberries! In hindsight that may have been a bit of overkill but we had a blast doing it and now have heaps of berries for our morning smoothies – win win!
So with all this excitement of summer I decided to make this weekly roundup a bright and colourful one! I hope you’re all having a great holiday!

Goodness me, can any else believe that there are only 5 more sleeps until Christmas, it’s so exciting! I love how busy, relaxing and fun filled this time of the year is, I find that I tend to bake a lot during the silly season I find quite calming potting in the kitchen while everyone else runs around – hehe and you get to try everything first! These oh so cute Mini Chocolate Guinness would be the perfect treat for any Christmas celebration – they would be so lovely served with some delicious fresh summer berries and vanilla ice cream. x

I have a huge soft spot for white chocolate and raspberry – it really is the loveliest match of flavours and is perfect as a little cupcake, plus these cupcakes are so lovely for an afternoon tea, dessert during the Christmas season or even a lovely homemade gift. With all of the delicious summer berries in season at the moment, it’s the perfect time to make a few batches of lovely raspberry curd to add to your baking and oh so cute white chocolate and raspberry curd cupcakes! x

I love this time of the year, Christmas and holiday time is just around the corner and we are spoilt for choice with lots of delicious summer berries! I’ve always had a bit of a soft spot for raspberries, they’re just so delicious and they pair beautifully with so many baked goods – I couldn’t think of a more perfect time of the year to whip up a few batches raspberry curd to add to your cakes, cupcakes or even give as a gift for the baker in your family. x

With Christmas just around the corner I’ve been thinking of things to bake, I’m not a fan at all of the traditional fruit cake, it’s just too heavy for me. But angel food cake, now this is the yummiest lightest cake you will ever try, it was the main cake for the gorgeous neutral dessert table that I worked on with Coralee, All the Frills and Toodles Noodles a while ago. This light airy and oh so delicious cake would be the perfect way to end a family Christmas lunch or dinner with some sweet fresh berries sprinkled on top for a little Christmas cheer. x

Oh my, how spoilt would you feel getting to attend a wedding like this! I love love love the idea of a dessert wedding as it has such a relaxing feel to it and honestly who doesn’t like cake, delicious blackberry tarts and yummy sweets! I adore the brides style, there is something so elegant about a sweet braided updo, soft dress and a bright rustic style bouquet – simply stunning! Oh my, I don’t have the words to thank you all enough for your incredibly lovely comments about the baking class, I am so overwhelmed thank you! Here is a lovely and easy banana bread recipe to get you through these chilly winter days that we’re having a that moment, it goes beautiful with warm caramel sauce and a warm cup of tea – I served slices of this at the baking class on Saturday and it was a huge hit!
I have also announced the date for my second baking class, it is Saturday the 4th of August from 11am – 2pm we will be covering the same recipes from the first for anyone that wasn’t able to attend, I will also be announcing more dates with other recipes shortly. Happy Friday everyone, I hope you have had a wonderful week and have something fantastic planned for the weekend.
