Happy Friday everyone, oh my gosh I’m so excited that today is the last working day for 2013 and Christmas is just around the corner – it really is the most wonderful time of the year! 2013 has been an absolute whirlwind ride for Ben and I – it’s been so amazing in so many ways and so hard at the same time. This year bought us so many wonderful adventures, from little weekends away to Sydney, workshops, growing Made From Scratch, beautiful weddings, and so many other lovely things that make up a year. One that will forever make my heart swell with pride is Ben finishing his MBA, he really is beyond amazing and I’ll never be able to put into words how proud I am of what he’s achieved. Through all the highs this year Ben and I have had quite a difficult time personally, I’m not sure if I’m ready to talk about it on here as Made From Scratch is and always will be my lovely little slice of the heaven where I’m truly honoured and so lucky to be able to share with you things that inspire me – one day I might get there as it’s something that I would like to share, but once I do I won’t be able to hide away from it again, so we will see.
But for now, we’re looking forward to three blissful weeks of holiday – this is my first ever holiday away from the blog in three years, I’m beyond excited and a little terrified at the same time. After such a busy year we really need a little time out to process everything, spend some time together and with our beautiful friends and family, drink a few frozen mojitos and enjoy everything that New Zealand has to offer during summer – I will still be on sharing beautiful pictures on instagram and pinterest throughout our summer holiday though. I want to thank you all so so much for everything this year, you truly have no idea how much your beautiful comments, likes, shares and constant support of my work means to me – I really do have the best job in the world and I have all of you to thank for that! From my cute family to yours, I wish you all a very very Merry Christmas and a Happy New Year, I’ll be back blogging on Monday the 13th of January 2014 where I already can’t wait to share some of our plans for the new year. With only one day left of the working year for 2013 I thought it would be the perfect time to mix up a few delicious summer cocktails to celebrate the end of a very busy year. One of my all time favourite cocktails is a delicious and wonderfully easy Frozen Mojito – there really is something so perfect about a splash or two of white rum, soda water, lemon and of course a lot of fresh mint. Plus, it’s the most perfect drink to whip up in my shiny new KitchenAid Artisan Blender – it even has a cocktail function which is incredibly cute! KitchenAid have also just released some gorgeous videos of what else you can whip up in one of their amazing blenders, from Capsicum and Almond Dip, Passionfruit Ripple Cheesecake and of course the most stunning frozen Cosmopolitan - all of which are beyond perfect for summer entertaining. Oh gosh, I’m so excited about the end of this week drawing closer and closer – is anyone else excited that Christmas Day is only a week away and that our glorious summer holidays start this weekend?! Yesterday my hubby I got home from the most wonderful sweet escape up north- those who follow Made From Scratch on Instagram would have seen a few gorgeous sneak peeks. This year has been wonderfully kind and unkind to us, and unbelievably busy so we thought it was the perfect time to escape for a few days before the end of the year, just us, and to somewhere absolutely stunning – we had never been to Coopers Beach before so it was a pretty easy decision to make and we’re so so glad that we did. The beaches, bays and scenery up north really are beyond breathtaking, the weather was stunning and the water was so warm that we felt like we were on a tropical island – we really are so so lucky to live in such a beautiful place and this tiny slice of heaven really is the perfect place for summer in New Zealand.

I’m sure I’m not the only one who’s finding it terribly hard to concentrate on work at the moment – the sun is shining, Christmas holidays are just around the corner, the weather is deliciously warm and it feels like all of New Zealand’s beautiful beaches are calling our names. Summer is easily my favourite season, I’m defiantly someone who adores the heat and warmth that summer brings with it – plus it’s the best time of the year to get outside and enjoy our amazing country. With two weeks until Christmas Day, so so excited about this, I thought I would share my gift guide for the dapper man in your life. I’ve stopped asking my hubby, dad, father in law and brothers what they would like as their answer is normally ‘nothing’ – which of course is never helpful. It’s a good thing that I’ve always loved gift hunting for guys as there really are so many beautiful and almost endless items out there – plus I’m yet to meet any man that wouldn’t adore a beautiful watch, small leather goods or of course a good bottle of whisky here and there. One of my all time favourite sweets when I was younger was coconut ice – not only is it incredibly pretty and reminds me of lazy afternoons baking with my Grandma, it’s also wonderfully simple to make and is always a crowd favourite. You may have noticed that there have been quite a few delicious Ice Cream posts on the blog lately, a few months ago I was approached by Tip Top Ice Cream to see if I would help promote their iconic ice cream over the summer months with a delicious new recipe each week. Of course I jumped at the chance and have had the absolute honour of creating a new recipe for you each week, I hope you’ve been enjoying them as much as I have as I really can’t think of anything more perfect than ice cream during summer. So this week I thought what could possibly be better than combining delicious strawberries and cream ice cream, either freeze dried or fresh strawberries with the most perfect coconut ice base – the end result is the most delicious, refreshing and pretty coconut ice slice you’ll ever try.
