chocolate-coffee-and-caramel-layer-cake-recipe-made-from-scratch

There really is nothing more perfect than a slice, or two, of delicious chocolate and coffee cake topped with heavenly caramel buttercream?! I had the absolute honour and so much fun baking this cake with my amazing friend Emma from The Feature Wall last week for the opening of her brothers stunning new cafe bar, Deluxe. Emma and I had such a lovely afternoon/evening adapting Annabel Langbein’s stunning Ultimate Chocolate Cake Recipe and creating a beautiful two tier exposed layer cake that would be perfect for any celebration! If you’re out and about in Mt Roskill you really must take a peek at this fantastic new coffee bar that’s serving some of the best coffees in Auckland! I hope you have a lovely week planned, I’d love to know what you think of this cake if you give it a try. x

Parisian Flan

parisian flan recipe made from scratch blog

I know that Bastille Day isn’t until the 14th but with all the beautiful and delicious celebrations around the truly stunning French culture happening this weekend I thought I’d share one of my favourite new dishes. A truly classic and completely perfect Parisian Flan. It’s like a ‘grown up’ vanilla slice – it’s wonderfully simple to make and the silky texture with the signature caramelised top is beyond perfection, I’m even going to be bold enough to say that it’s now one of my top 5 favourite desserts – and terribly popular with my hubbies work which is always so nice! So in honour of Bastille Day and one of my favourite countries in the whole world I hope you enjoy this truly stunning Parisian Flan – it’s a perfect dessert to make over a rainy weekend. x

June-Instagram-Roundup-Made-From-Scratch

Gosh, can anyone else believe that we’re now half way through 2014 – as fast as it’s going, it’s also been a really lovely year for us so far that’s been full of catching up with friends, dreaming incredibly big dreams for our future, planning new adventures to go on (like planing a trip back to Vietnam at the end of the year!!) and enjoying life without uni. It’s been bliss! I mentioned a little while ago that we’ve been busy working behind the scenes to rebrand Made From Scratch – it’s time to shake things up with a new look, layout and add a few exciting features to the blog. I’m so excited to say that the design is all finished (the perfectionist in me slowed everything down) and I’m now the proud new owner of a stunning new logo and blog, fingers crossed I’ll be able to unveil it in all it’s glory shortly.

So to celebrate a lovely year so far I thought I’d share a little collection of my favourite images that I’ve shared on Instagram during June. And also to thank each and everyone of supporting, sharing and being apart of this with me – none of this would ever be possible without you and I’m truly so honoured that you’re kind enough to support my work. Thank you so much, I can’t wait to see what the rest of the year brings. x

lemon and coconut loaf made from scratch

I’m terribly sorry for how quite the blog has been over the past week. I’ve been lying very very low with an awful head and chest cold – it’s been a week of sleeping, pinning, admiring instagram and watching an embarrassing amount of gossip girl. Thankfully though I can tell when I’m done with being sick and almost better when I start cleaning the house and baking. So to celebrate the end of a lousy week I’ve whipped up the most delicious Lemon and Coconut Loaf that’s perfect for a little winter weekend baking – it’s easily one of my favourite recipes as it takes no time at all to make and of course is so delicious is never lasts longer than a day. The recipe below includes a beautiful lemon drizzle icing that adds a delicious burst of lemon to the top, I left this loaf un-iced as I plan on toasting a slice or two over the weekend for brunch or afternoon tea. I hope everyone has a wonderful weekend planned. x

lemon and almond friand made from scratch

I’ve always found it so lovely that lemons are in season during winter – it’s almost like nature wants to remind us of brighter things on gloomy winter days. So because this week has been particularly gloomy,  yesterday afternoon I whipped up a batch of delicious and very simple Lemon, Almond and Coconut Friands – not only is the texture of these small cakes divine, they’re also incredible adaptable. You can easily switch the lemon and coconut for raspberry and white chocolate or a classic lime friand – the possibilities are truly endless, and of course delicious! I’d love to hear what your favourite friand flavour is.

I’m also so excited to share that I’ve been asked by the truly lovely and talented Lauren Kelp to be a guest blogger on her beautiful blog – as it’s summer in the states Lauren is generously sharing a few of my older recipes, but shortly I’ll be sharing exclusive recipes for Lauren. If you haven’t had a peek at her work yet, you must, it’s so beautiful! I hope everyone has a lovely day planned and are tucked up somewhere warm away from the rain. x

dark-chocolate-chip-cookie-recipe-made-from-scratch

There are truly no words to describe how incredibly thankful I am for all of your generosity, support and love towards Gem, Nath, Coco Darling and their family – they are so grateful and humbled by your love. In tragic and heart breaking moments like this you feel terribly helpless, if you wish to help Gem and Nath through this time please have a look at this post for more details. The generosity has been beyond what I ever imagined would come of this, all I can do is thank you with all of my heart!

I shared on my Instagram account this afternoon a little of what I was up to – my ‘therapy’ has always been to bake and adapting old recipes, I find baking so calming and it always add’s a little comfort to dark and cold winter days. And as promised, here is the delicious recipe I adapted from a 1978 edition of The Australian and New Zealand Family Cookbook that my Grandma so kindly handed down to me. I wanted to add a modern and warm touch to the classic chocolate chip cookie, the end result is a perfect batch of Dark Chocolate Chip Cookies, with a twist of orange zest and delicate spices – which turns out to be a perfect combination of flavours. These cookies are so simple to make and are a delicious treat for a cold winters evening, I’d love to know what you think. x
