I know that Bastille Day isn’t until the 14th but with all the beautiful and delicious celebrations around the truly stunning French culture happening this weekend I thought I’d share one of my favourite new dishes. A truly classic and completely perfect Parisian Flan. It’s like a ‘grown up’ vanilla slice – it’s wonderfully simple to make and the silky texture with the signature caramelised top is beyond perfection, I’m even going to be bold enough to say that it’s now one of my top 5 favourite desserts – and terribly popular with my hubbies work which is always so nice! So in honour of Bastille Day and one of my favourite countries in the whole world I hope you enjoy this truly stunning Parisian Flan – it’s a perfect dessert to make over a rainy weekend. x

IMG_0142 There really is something so perfect about the combination of classic Tip Top Vanilla Ice Cream, salty peanut butter and sweet caramel – it’s just magic really! Aside from the weather bomb that’s predicted for this weekend, we’ve been so spoilt with the most amazing warm Autumn weather, which of course still calls for delicious summer treats in my mind. So I thought I’d whip up these wonderfully simple and ridiculously delicious Peanut Butter and Caramel Ice Creams that are a cinch to make and will keep long enough in the freezer for whenever you’re wanting a sweet treat. The best part is that you can of course make your own flavour combinations, anything from all chocolate with maltesers, to vanilla with strawberry sauce and peanuts – the choices really are endless! Over the weekend I shared a few delicious sneak peeks of this gorgeous Black Doris Plum and Vanilla Layer Cake that I made for Ben’s Nana’s 90th Birthday party – which of course you can see here and here if you missed them. And as promised, I’m so thrilled to share my new recipe for one of the most delicious cakes I’ve made in a while. The vanilla soaked sweetness and sometimes tartness of the plums work so perfectly with this delicate vanilla cake and icing – the best part is this gorgeous summer cake is wonderfully simple to prepare, ridiculously pretty and will quickly become a crowd favourite at your next celebration. IMG_0241 I had such a lovely and incredibly overwhelming response from my Christmas Ice Cream Cake that I simply had to make another – plus I love how easy they are to make and of course are a delicious change to traditional Christmas baking. I served this at a party we had on the weekend to celebrate the end of Ben’s MBA, it disappeared before it even had a chance to melt and within seconds everyone was asking for the recipe – which is always the highest of compliments to any baker. For those who adore the richness of Christmas puddings, you’ll absolutely love this recipe, the caramel ice cream, christmas spices, mixed fruit, chocolate and of course cherries really are the most wonderful combination – and the best part is that you can whip this up a few days before Christmas as it will keep just like ice-cream. Happy Monday everyone, I hope you all had a lovely weekend. We had the most wonderful weekend celebrating the end of Ben’s MBA with all our friends and family – it was the perfect way to end a very busy year, thank you so so much to everyone for your well wishes and of course those who celebrated with us, it really was a fantastic weekend!

You may have noticed lately that I’ve become a little obsessed with strawberries – in my mind they’re the king of summer berries, they’re just so delicious and of course can be made into everything from tarts, puddings and various ice cream treats. I’ve been wanting to whip up a batch of strawberry jam for a while now so last week on a rainy summers afternoon I made the most perfect batch of strawberry and vanilla jam. If you’ve never made jam before wonderfully easy, you can experiment with different flavours of fruit low in pectin that you like and of course an afternoon of jam making will leave your home smelling absolutely stunning, plus a few delicious jars of homemade strawberry jam would make such a lovely Christmas gift this year. x

With Summer well and truly here and Christmas just around the corner I’ve been dream up delicious things that I can make for our family for Christmas day. I’ve always found the idea of Christmas pudding on a hot summers day just a little too much, they’re absolutely amazing just a little too much especially after being in a warm kitchen all day. So I thought what could be more perfect than a Christmas Ice Cream Cake, generously filled with some of the very best ingredients that New Zealand has to offer – classic Vanilla Tip Top Ice CreamHeilala Vanilla Bean PasteWhittakers White Chocolate and Fresh As Raspberries atop a delicious gingernut biscuit base really does make for the most perfect combination of flavours and gorgeous summer colours. This wonderfully simple and beautiful ice cream cake really would be the most perfect dessert for any celebration this summer. x

Milo Cupcakes

I’ve no doubt that everyone who grew up in Australia and New Zealand has a bit of a soft spot for Milo – it’s just so good and is of course perfect with milk, amazing with milkshakes, absolutely incredible on top of vanilla ice cream plus it also bakes perfectly into the most delicious cupcakes! I couldn’t remember the last time that I’d made cupcakes so I simply had to whip up a batch with some pretty cupcake wrappers and I thought what would be more perfect than combining cupcakes with that familiar and wonderfully nostalgic taste of Milo – these cupcakes have the most wonderful hit of malt chocolate goodness and of course go perfectly with vanilla buttercream and a little Milo sprinkled on top. If you’re a fan you simply must try this recipe, it’s delicious. x
