There really is nothing more perfect than a delicious batch of homemade cookies to enjoy with your amazing family on a chilly Winters evening - those who generously follow Made From Scratch on Instagram would have seen our mini mountain of cookies a few nights ago. They were eaten so quickly that I had to keep a few safely hidden away just so that I could take a photo of them and share this absolutely perfect chocolate chip recipe with you. If you’re a fan of cookies that are crispy on the outside and wonderfully chewy in the middle then you will absolutely adore these - plus they really are the perfect mid-winter treat! The Perfect Chocolate Chip Cookie Recipe

 2 cups plain flour
1 1/2 teaspoons baking soda
225 g butter, softened
1 cup brown sugar
1/2 cup white sugar
2 eggs
3 tablespoons vanilla essence 
1 block, 250g, good quality dark chocolate - roughly chopped
Preheat oven 1to 180°C and line your cookie trays with baking paper. 
In a small bowl, whisk to combine the plain flour and baking soda. In a large mixing bowl, beat the butter and both sugars with an electric mixer on high until light and fluffy. Add in eggs one at a time before adding in the vanilla and continue to mix until combine and light and fluffy.
Lower the speed to low/medium and gradually add in the flour and baking soda until a soft dough forms before adding in the chopped chocolate and mixing until just combined. Drop generous tablespoons of cookie dough onto your prepared baking tray and bake for around 8-10 minutes or until the edges are golden brown. Allow to cool slightly on the tray before transferring to a wire rack to cool and become crispy on the outside and chewy in the middle. Repeat until all the cookie dough has been used - or if you’re wanting giant cookies, measure out a 1/4 cup of cookie dough. Enjoy, while still warm with a delicious cup of tea. x
