muesliHello everyone, I hope you had a wonderful weekend. I had the best weekend, it started with my birthday on Friday where Ben hijacked my blog and did a very special birthday post for me. I was flooded with so many lovely Birthday wishes, thank you all so much you are all far too kind! Ben spoilt me by taking me to the loviest tea shop, oh my its just gorgeous, so much so that I will tell you more in another post! We then caught up with some friends for a BBQ then the following night my gorgeous family took me out for the most delicious dinner, no one spoke to each other when we were eating it was that good! It was the perfect way to spend a weekend, I also made some homemade muesli while pottering around, its the easiest thing in the world to make and so so tasty! The best part about making muesli is you don’t have to be exact with the measurements and you can add what ever nuts, seeds, dried fruit and cereals you like.

Toasted Almond, Honey & Walnut Muesli

750g rolled oats
2 cups walnuts, chopped
2 cups almonds, chopped
1 cup dried apricots, chopped
3 tablespoons honey
1/4 cup almond oil - if you don’t have almond oil, just add more olive oil or a few spoonfuls of butter for a richer flavor.
1/4 cup olive oil
1 teaspoon vanilla essence
Preheat oven to 150°C. In a large bowl add all off the dry ingredients, and mix until combined. In a small saucepan pour honey, vanilla and both oils, heat over a low heat until runny. Pour liquid mixture over dry oat mixture and stir until combined.
Pour muesli into two baking trays and bake for around 45min, make sure you keep checking and stirring every now and then so it won’t burn. Allow to cool and store in a pretty airtight container.
The flavor combinations are endless, I have added coconut, cranberries, raisins to the mix and they all turn out delicious. Especially my new  flavour combination - peanut butter, chocolate & vanilla muesli. Its delicious!
