Recipe
Preheat oven to 160ÂșC and line two baking trays with baking paper. In a large mixing bowl, combine the flour, oats, sugar and coconut and mix until combined. In a small saucepan, gently melt the golden syrup, butter and vanilla essence until melted and smooth. Add the bicarbonate of soda and quickly stir until well combined and smooth. Add syrup mixture to the dry ingredients and mix well until combined.
Roll golf ball sizes of dough on to a baking tray and gently press - bake for 10-12 min or until the edges start to brown. Allow to cool slightly on the tray before transferring to a wire rack to cool, or of course enjoy while still warm.
