There really is nothing more perfect than a slice, or two, of delicious chocolate and coffee cake topped with heavenly caramel buttercream?! I had the absolute honour and so much fun baking this cake with my amazing friend Emma from The Feature Wall last week for the opening of her brothers stunning new cafe bar, Deluxe. Emma and I had such a lovely afternoon/evening adapting Annabel Langbein’s stunning Ultimate Chocolate Cake Recipe and creating a beautiful two tier exposed layer cake that would be perfect for any celebration! If you’re out and about in Mt Roskill you really must take a peek at this fantastic new coffee bar that’s serving some of the best coffees in Auckland! I hope you have a lovely week planned, I’d love to know what you think of this cake if you give it a try. x

There are times when you want to spend a lot of time creating a beautiful cake, and there are other times when you want to whip up something that takes less than an hour from start to finish. This simple yet perfect vanilla cake is one of those truly delicious cakes that takes no time at all and can be made for any occasion – it’s wonderful for afternoon tea served with a light dusting of icing sugar, cream and seasonal fruit. Or of course you can ‘dress’ it up a little more with icing – or even make two cakes and create a layer cake. This is what I love about baking, the options of how to serve a classic vanilla cake are truly endless, and this lovely recipe is such a perfect place to start. x

lemon and almond friand made from scratch

I’ve always found it so lovely that lemons are in season during winter – it’s almost like nature wants to remind us of brighter things on gloomy winter days. So because this week has been particularly gloomy,  yesterday afternoon I whipped up a batch of delicious and very simple Lemon, Almond and Coconut Friands – not only is the texture of these small cakes divine, they’re also incredible adaptable. You can easily switch the lemon and coconut for raspberry and white chocolate or a classic lime friand – the possibilities are truly endless, and of course delicious! I’d love to hear what your favourite friand flavour is.

I’m also so excited to share that I’ve been asked by the truly lovely and talented Lauren Kelp to be a guest blogger on her beautiful blog – as it’s summer in the states Lauren is generously sharing a few of my older recipes, but shortly I’ll be sharing exclusive recipes for Lauren. If you haven’t had a peek at her work yet, you must, it’s so beautiful! I hope everyone has a lovely day planned and are tucked up somewhere warm away from the rain. x

With the wedding season almost at a close, stylists and photographers have a little more time to create and share beautiful style shoots, I love it as it’s a lovely way to see their work in the very best light. It’s also a perfect time for brides to be to gather ideas for their upcoming weddings in the new year. I’m terribly honoured to share this beautiful Geometric Styled Shoot that was perfectly styled by Jess from Two Foxes and beautifully photographed by my amazing friend Coralee Stone. I love the minimalistic blonde wood and all white table setting with touches of bright pastels and lush succulents its beyond perfect – and of course the truly stunning lace Rue De Seine dress pared with a giant protea bouquet is to die for! Be sure to take a peek at here to see the rest of this beautiful shoot.

Made-From-Scratch--Photos-by-Coralee-from-Coralee-and-Alex-(129-of-167) Happy Friday everyone, gosh this week has one of those weird weeks where it’s oddly calm but flat out busy! It’s been a week full of exciting changes surrounding my new design and logo, family matters that break the heart, delicious media launches and of course counting down the days until my hubby and I fly to Rarotonga next Saturday for a much needed holiday and a little down time. Our little holiday can’t come soon enough! After such a funny week full of every emotion known to man I’ve reached the end of the week so tired and a little unmotivated – thank goodness a break is just around the corner.

So I thought I would share something that brings so much joy to my heart, a little peek into something that two of my dearest friends help me style a little while ago – the truly talented Mel from All the Frills styled everything and my amazing friend Coralee (just wait until you see Coralee’s new brand and website, it’s incredible!!) photographed this beautiful dessert table, I quite like that you haven’t seen the whole thing as I can keep sharing bits and pieces from it. You can find all the recipes for these three cakes on the blog, here, here and here. I also want to share a few of my favourite things that I’ve stumbled upon during the week that you should defiantly take a peek at over the weekend. I hope everyone has a truly lovely weekend planned and to all the mama’s our there, Happy Mothers Day xo

If you have any celebrations, dinners or birthdays coming up this weekend or shortly, be sure to try this recipe, I’d love to know what you think. I hope everyone had a truly wonderful weekend planned, and in honour of ANZAC Day tomorrow. Lest We Forget. x

It’s not very often re-share my recipes, but I just can’t help but share my carrot cake recipe again – it’s wonderfully simple to make and really is so perfect. I made this delicious cake almost two years ago for Easter and thought it would be perfect to whip up again this Easter – especially with the horrible weather we’re having at the moment, I think it’s the perfect time to potter in the kitchen and fill your home with the beautiful warm spices from this delicious cake. And of course top with generous amounts of the silkiest cream cheese icing and you’ll have a dessert that everyone will adore this weekend.

I hope that everyone has a truly wonderful long weekend planned with your beautiful friends and family. After some very exciting news yesterday about my hubbies new job offer, we’re off to celebrate with some amazing friends of ours, go to a beautiful house warming and of course eat a silly amount of chocolate. Have a lovely long weekend everyone, I’ll see you again on Tuesday. Happy Easter everyone. xo
